The Longitudinal Muscle in Esophageal Disease
O. Arthur Stiennon has published the full text of his book at this site. The volume provides extensive references to research that both raises questions and provides insight into the neuromuscular function of the esophagus and esophageal disease. Lots of food for thought here!

Olfaction and Gustation–Molecular Biology of Smell and Taste Receptors
Taste and smell provide major contributions to our skill and enjoyment of eating. Here is a fully illustrated summary of the anatomy and neurophysiology of these two senses.

Smell and the Olfactory System
Colorful graphics of the olfactory system accompany a clear discussion of the anatomy and physiology of our sense of smell.

Review of Anatomy
A text review of head and neck anatomy is provided at this site. Included are sections on the temporal bone, ear, nose, paranasal sinuses, oral cavity, pharynx, larynx, salivary glands, and neck.

The University of Washington's Developmental Speech Physiology Lab
The Developmental Speech Physiology Lab supports the study of the development of articulatory, laryngeal, and respiratory coordination for speech and oromotor behaviors, including chewing and sucking. Research seeks to understand the organizing principles underlying the physiologic development of speech production. Preliminary investigations have demonstrated that the coordinative organization for speech is distinct from the organization of sucking and chewing. From their research, they believe that speech motor control emerges in parallel with other oromotor activities, but is not dependent upon feeding and non-speech oral movements. This fascinating web site includes articles in PDF format and slide shows describing the results of their research.
